I just love this vegetarian green pea pasta. It is so easy and can be whipped up in a matter of minutes, using frozen peas of all things.

Ingredients:

  • 500 g pasta of your choice
  • 2 cups frozen peas
  • 1/4 cup parmesan cheese
  • 1/4 cup milk of your choice
  • 1 cube vegetable stock in 1/2 cup water
  • Seasoning including chilli flakes, black pepper and garlic flakes
  • Baby tomatoes to serve

Method:

  1. Cook pasta
  2. Microwave frozen peas for 3 minutes
  3. While peas are in the microwave, add all ingredients except baby tomatoes to a blender, add peas once microwaved and blend until smooth
  4. Combine blended pea sauce with cooked pasta (use some pasta water to achieve desired consistency) and serve with halved baby tomatoes
