I just love this vegetarian green pea pasta. It is so easy and can be whipped up in a matter of minutes, using frozen peas of all things.
Ingredients:
- 500 g pasta of your choice
- 2 cups frozen peas
- 1/4 cup parmesan cheese
- 1/4 cup milk of your choice
- 1 cube vegetable stock in 1/2 cup water
- Seasoning including chilli flakes, black pepper and garlic flakes
- Baby tomatoes to serve
Method:
- Cook pasta
- Microwave frozen peas for 3 minutes
- While peas are in the microwave, add all ingredients except baby tomatoes to a blender, add peas once microwaved and blend until smooth
- Combine blended pea sauce with cooked pasta (use some pasta water to achieve desired consistency) and serve with halved baby tomatoes
